Best Banana Bread


Banana bread is a big hit around here. I love it with honey, Chris tops his with peanut butter and Eloise keeps it plain and simple. My favourite recipe* is made with yogurt so it's super moist and low in fat, though maybe not after I add a few handfuls of chocolate chips!

Best Banana Bread

3 ripe bananas, mashed
1/4 cup liquid honey
1/4 cup sugar
2 teaspoons vanilla extract
1 cup 2% or 3.5% fat yogurt
2 tablespoons sunflower oil
1 1/2 cup all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/2 cup chocolate chips, optional 

Preheat oven to 350. Grease a loaf pan and set aside.

In a small bowl mash bananas and add honey, sugar, vanilla, yogurt and oil. Mix well. In another bowl combine flour, baking soda, salt and nutmeg. If using, add chocolate chips. Combine the banana mixture with the flour and mix. Pour into prepared loaf pan and bake for 45 mins.

Try to eat just one piece!
