Oreo-Stuffed Chocolate Chip Cookies

Yes, you read that correctly. Oreo. Stuffed. Chocolate. Chip. Cookies.

I first spotted this decadent treat on Bon Appétit Daily and knew I had to try it out. The recipe is the creation of blogger Jenny on the food blog, Picky Palate, but I opted to use her recipe as a guideline, swapping in my own classic chocolate chip cookie recipe instead.

Oreo-Stuffed Chocolate Chip Cookies

3/4 cup Earth Balance (a vegan butter alternative)
1 cup dark brown sugar
3/4 cup white sugar
2 eggs, at room temperature
2 tsp pure vanilla
3 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup dark chocolate chips

1 bag of Oreo Cookies  

Preheat oven to 350 degrees. Using an electric mixer, cream the butter with both sugars until smooth. Add in eggs and vanilla and continue beating until light and fluffy. Over the sugar mixture sift flour, baking powder, baking soda and salt. Gently mix all ingredients to form a smooth dough and gradually add in chocolate chips. Mix to combine well.

Using a large spoon (or your hands), scoop out a handful of chocolate chip dough and place on one half of an Oreo. Repeat for the other half. Use your hands to shape the cookie dough completely around the Oreo, creating a ball-like shape. 

Place cookies on a baking sheet lined with parchment paper, spacing them well apart. Bake for 10-12 minutes and allow to cool on a wire rack. Enjoy while warm.

I served these after dinner last weekend but didn't tell anyone why the chocolate chip cookies were so huge. You should have seen the look on my brother-in-laws face when he bit in... it was well worth the time it took to put these beauties together!
