Cookie Monster

Mmm mmm A tin full of Chocolate Chip Cookies

I'm a dessert-a-holic and I'm not afraid to admit it. We always have sweets on hand so when our pantry was lacking sweet stuff yesterday I went to work whipping up a batch of my very favourite Chocolate Chip Oatmeal Cookies.

Jordan's Oatmeal Chocolate Chip Cookies

3/4 cup Earth Balance vegan margarine (you could totally use butter, but I'm lactose intolerant, so...)
1 cup packed brown sugar
3/4 cup white sugar
2 eggs
2 tsp pure vanilla extract
2 1/2 cups all-purpose flour
2 cups rolled oats
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup semi-sweet chocolate chips

Allow ingredients to come to room temperature. Preheat oven to 350.
Cream Earth Balance and sugars until well combined. Add in eggs, one at a time, beating until mixture lightens. Add vanilla and stir. Add in flour, oats, baking powder, baking soda, salt and chocolate chips and stir until the mixture resembles a dough.

Using your hands or a spoon, drop tablespoon sized balls of dough onto cookie sheets. Bake 7-9 mins or until golden brown. Let sit for 5 minutes before removing from the cookie sheet and cooling on wire racks. Try to eat just one (impossible) and store remaining cookies in an airtight container.
